Avocado toast is all the rage! I’ve seen and tasted some very good expressions of this trendy favorite, but none as good as the ones I’ve concocted in my own kitchen. It’s fun to play and experiment to see what new combinations I can discover by adding fresh interesting ingredients like egg, ricotta, fresh herbs, citrus zest or veggies. Changing up the bread on top of all that leads to limitless possibilities.
So, I’m not going to lie, this past month has been difficult and I’ve gotten sidetracked from writing. Between a case of the post-vacation blues, equipment and personnel issues, family concerns, more travel, and a terrible respiratory infection, I’ve been needing some personal pampering! Avocado to the rescue
Toast one big slice of good quality bread. I used a nice rustic pumpkin/sunflower seed. Smear some coconut oil on top then pile on half a sliced avocado lightly mashed, a couple of small colorful chopped peppers, and fresh tomatoes. Drizzle olive oil, salt, pepper, and a teaspoon of Bragg’s apple cider vinegar. And… that’s it!
